From our first session, I felt very at ease and comfortable talking with you and knew you were the perfect coach for me. You are friendly, upbeat, easy to talk to, knowledgeable, experienced and very perceptive.

One of my greatest challenges has been being hard on myself, pushing myself to be perfect, and always trying to do more, be better, and feel good enough. Without me telling you that, or even being aware of it myself at the time, you intuitively knew to be gentle with me. You taught me to give myself permission to rest, take it easy, do less, enjoy a movie or book even when I had other things that needed doing. In a sense, you “parented” me and showed me how to be kinder to myself. As a result, I am so much more relaxed, and life is so much easier!

I just reviewed my notes from each of our calls and am blown away by how much great information I received – I’m so glad I wrote it all down! After our calls, I was always amazed at how spot on your insights were, and your feedback and suggestions were always helpful and left me feeling positive and inspired. Thank you so much for sharing the past six months with me. Your beautiful smile and positive attitude were always the highlight of my week! The food choices on my countertops, in my fridge and in my pantry have changed drastically. I am now excited to look in there and see live, healthy food and no more store bought cookies caked in sugary, red dye number 40 icing! Working in the EMS field we are often subjected to excrutiatingly long hours and literally eating on the run. Oftentimes this has lead to poor food choices from fast food type restaurants.

Through your program and our time together, my coworkers have watched me transforming my food choices and the resulting change in my energy levels, attitude and behavior and they now cant wait to see what I bring in next, and even ask me to get things for them like goji berries, cacao bits, and coconut water, none of which they had ever even heard of before! So, not only have you changed my life but you have helped in the healthy transformation of an entire EMS community. I am deeply grateful for all you have done!

Thank you so much!!! Since I am a personal fitness trainer with my own training studio, I thought I was pretty knowledgeable about nutrition and healthy lifestyles. I was surprised by how many new things I learned not only about the food I eat and serve my husband, but also about my personal lifestyle choices.

Each session was filled with new ideas of how to eat and live healthier. Making small goals every session kept me on track to reaching my overall goal of eating healthier and feeling more energetic. I love the recipes you provided and use them often. I now incorporate the new grains and greens, that prior to our sessions, I knew nothing about. Just wanted to thank you again for the stimulating and healthy journey into nutrition for the body and soul. I have become so much more aware of the choices I make every day regarding what to eat. As they say, “Knowledge is power” and now I have the knowledge to understand exactly how different foods affect me in the short and long terms. I can no longer make excuses for eating something that’s not in my best interests – I do know better, and my choices are with full knowledge. No more mindless munching on snacks with ingredients I can’t pronounce. No more additives – antibiotics, artificial colorings or flavorings, GMO, high fructose corn syrup …

 
now I have the knowledge to understand exactly how different foods affect me in the short and long terms… No more mindless munching on snacks…  

The biggest eye-openers for me were the weeks spent on grains, greens, fats and sweeteners. I have replaced white flour with all sorts of unusual, good-for-me flours I never would have tried before – teff, spelt, buckwheat, soy, and the basic whole wheat pastry flour which I usually use in combination with one of the other types of flour. My family loves, loves loves quinoa! We put our homemade Italian tomato sauce over it last week instead of pasta. I have added collard greens, kale, mustard greens, arugula and broccoli rabe to my weekly shopping list. I’ve switched to using olive oil for most recipes, and the coconut oil is delicious in special recipes. Instead of that old white sugary stuff, I have agave nectar, barley malt, brown rice syrup (delicious warmed up on buckwheat pancakes for a Sunday morning treat) and organic brown sugar sitting on my shelf. I’ve gotten over my craving for sweets in the late afternoon, and now keep a container of cooked grains ready to add some almond milk and stevia to for a snack. I am looking forward to using all of the great veggies available this time of year for cooler weather comfort food – soups and stews.

I really enjoyed trying out the recipes you gave me. We’ll never forget that beet cake! It has been really fun (and a challenge) to figure out how to take my “old” recipes” and update them using more healthful ingredients. The tip sheets you provided on sweeteners, grains, proteins and flours were very helpful.

Since gradually improving my eating habits, I don’t feel like I’m missing anything in my food. In fact, I am a bit repulsed when I walk through the aisles of a regular grocery store and look at the junk that’s available for time-crunched mothers, who don’t know any better, to feed their children ……don’t get me started on that! I stick to the outside aisles of the store – that’s where the fresh, healthy stuff is located. You taught me well! I feel better – “lighter” and more energetic. The few times we have eaten at a restaurant, we have not felt too well afterward, even after making healthy choices. (I substituted a portion of garlic mashers one time for broccoli rabe – but the cook did not do a very good job of cooking it. I like MY cooking better!) Who knows what all is “hidden” in the restaurant food served? I do want to try out some vegetarian cafes though, and if I find something I like, I think I’ll be able to duplicate the recipe.

Since starting my sessions with you, we have been trying to actively support our local growers and organic markets. It costs a bit more for some things, but we feel that our patronage is an important statement about what we think is vital to staying healthy. As more and more people are turned on by fresher, home-cooked foods, maybe the growers will be able to expand production and the prices will eventually go down. I do see it all around us – people becoming more aware and making different choices because much of what’s been made available in our standard grocery stores just isn’t necessarily keeping us healthy. I hope you realize how your commitment to helping people get better with their nutrition is helping carry this movement along. You are part of the wave, Chris!
